What is chorizo? Depending on where you come from in the world, the Chorizo sausage can be a dry cured smoked sausage from Spain. It can also be a Mexican sausage, which is uncooked and used for breakfasts, tacos, burritos, etc. Both sausages may have the same name, but they have quite different flavours.
Pialligo's chorizo is made from pork fat and chopped pork meat, seasoned with Salt, Paprika, Corriander, Fresh Oregano, Fresh Corriander , Wine, Cumin and pepper.
